Homemade Ice-cream

With the warmer weather finally approaching we’ve been making lots of our favourite ice cream puddings. I love homemade ice-cream but have never made any myself. I toyed with the idea of buying an ice-cream attachment for my kitchenAid. But after a bit of research and discovering it needs to spend fifteen hours in the freezer before use, I realised it would probably end up forgotten in the cupboard – And really I’m just not that organised...

I had a quick search online for some easy homemade recipes that didn't require an ice-cream maker and came across this one by Mary Berry, which seemed perfect. It said the cream and egg whites could be mixed by hand but I thought it would be a great chance to try out the whisk attachment for my Magimix processor. 


I bought my Magimix shortly after Oli arrived, 7 years ago, and it’s still going strong. It has 3 different size bowls and came with a selection of attachments for slicing, choppin, whisking, and grating. It’s been so useful for making baby food, soups, cake batters, sauces, crumbles, burgers and, most importantly, chopping onions and vegetables so small the children will never know they’re there! I don’t think there is a week that goes by where I don’t use it now.

Anyway back to the ice cream - you could do this the old fashioned way with a hand whisk or use any food processer with a whisk attachment for this recipe. I whisked the egg whites in the processor first and then slowly added the sugar. Once mixed I transferred to a mixing bowl, gave the processor bowl a quick wipe around then lightly whisked the cream in it. The cream was then folded into the egg whites, along with the egg yolks and some raspberry sauce. And that was it! I emptied the mix into a container and froze for a couple of hours.




This made the most delicious ice cream and I was so surprised at how easy it was. I will definitely be trying the recipe again but next time with some of the other suggested flavours.

If you make home-made ice cream I’d love to hear your tips or favourite recipes. Mine did seem quite soft and melted quickly - I'm not sure if this is normal but it wasn't a problem for Lulu!
